In the Studio

My Etsy shop has been lacking something. Really good photography. With Dad's help that will be changing.


In order to do this we had to put a nail in Dorothy's bedroom wall. Her north facing room had the best natural light in the house. (A picture will soon be hanging over her bed to cover the rather big nail we used.)

Next Dad got out his real camera and equipment and the photos began.


Lastly comes editing in Dad's spare time. Once that is complete you can look for new pictures and even a few new products here (but not yet).

Thou shalt not be overcome.

 
When the body is broken we yearn for strength, for something to fill the gap so keenly felt. And so we eat food that brings the healing nutrition and drink the water that satisfies and purifies. We find refreshment. Sometimes the refreshment is deep and we gain much strength for the day before us. Yet more often the food and drink are only just enough to keep us to the next meal or snack.
 
So often at those times of bodily brokenness our souls are also broken. The journey is too much for us, and we need that heavenly Food and Drink lest we die inside. God gives it to us daily and it is enough. Sometimes what is given feels only just enough. But the truth is it is always more than enough.

There is always enough, more than enough, in Christ Jesus!

Sweet & Sour Meatballs


Hannah and I like to have our foods remind us of the olden days of no restrictions. "Remind" is the key word in that sentence. We are grateful for waning memories to aid us in the enjoyment of foods that have morphed a long way from their original.

One food that has changed little in flavor and texture since discovering our allergies and sensitivities are sweet and sour meatballs. It is a happy meal when this is on the table.

- Sweet & Sour Meatball Morph -

1 lb. ground bison
1/3 c. coconut milk
1 T. coconut flour
1 tsp. salt
1/2 tsp. Worcestershire sauce (I make my own to be allergy free)
minced onion

Mix gently and form into small meatballs. Fry in oil until well browned. Transfer to a baking dish.

1/4 c. honey
1 T. arrowroot starch
1/2 juice from can of pineapple tidbits
1/3 c. apple cider vinegar
1 T. coconut aminos

Mix sauce and pour over meatballs.

1/4 can pineapple tidbits

Top meatballs with pineapple. Bake until warm and bubbling in center. Add boiling water if sauce is too thick.

Serve over rice. Or eat as is with a good helping of veggies on the side for you AIP'ers (autoimmune protocol).

Note: We like to make a double batch to add to the freezer stash of easy meals and protein snacks.

A Belated Birthday Party...


...doesn't matter one bit as long as family and cake are involved. Her brothers home from travels meant that Dorothy could celebrate fifty-seven years with more family. Acute bronchitis setting in didn't stop her from enjoying the attention of family.
